Chocolate Chip Pie

This recipe for Chocolate Chip Pie is as old as my daughter . . . well, older I guess, since I got it from my cousin when I was pregnant with Jordan. Anyway, I’ve been making it for the last 22 years! It’s one of those recipes you save for special occasions because it truly is what the name says, DECADENT.

If you notice the size of the piece in the photo, that’s about all I can handle and I LOVE PIE. Almost all kinds.

Not mincemeat, I don’t like mincemeat.

Anyway, this pie will not disappoint. Not only is it easy to make but you get a lot of servings out of it since it only takes a small piece to satisfy even the most demanding sweet tooth.

A couple notes:
Here’s a recipe for a good, strong gluten-free pie crust.
I’ve been using America’s Test Kitchen gluten-free flour mixture lately for everything. You may use whatever gluten-free flour you like though.
I use only cane sugar, and I get organic if it’s readily available.
I’ve given up soy completely because of my allergies so I choose to buy a brand of chocolate that doesn’t use soy lecithin as an emulsifier. The only one I’ve found available to me is Simply Enjoy brand.
I find walnuts bitter and they burn my mouth if they are not soaked so I always take the time to prepare them in large batches a couple time a year. Here’s a great guide to soaking and drying nuts of all kinds. I also go one step further and toast them because I like the depth of flavor it adds. Unsoaked walnuts will work just fine here though if that’s all you have.

Ingredients
  • One gluten-free crust, unbaked
  • 2 eggs
  • ½ cup gluten-free flour (I use American's Test Kitchen mixture)
  • ½ cup cane sugar
  • ½ cup firmly packed brown sugar
  • 1 cup butter, melted and cooled to room temperature
  • 1 cup chocolate chips (I use Simply Enjoy brand)
  • 1 cup walnuts (preferably soaked, dried and toasted)
Instructions
  1. Preheat oven to 325˚
  2. In a large bowl, beat eggs until frothy.
  3. Add in flour, sugars and melted butter.
  4. Stir in chocolate chips and walnuts.
  5. Pour into pie shell and bake for 1 hour.
  6. Serve warm with real whipped cream or ice cream. It goes perfectly with coffee too!
