I promised you last post that I’d give you something to do with the gluten-free Garlic Basil Pasta I told you about. Well, here it is!
Broccoli, Bacon and Brown Butter Pasta!
It includes butter. Lots of it. And, to make it even better, we’ve browned it a bit to make it even more rich and delicious.
If you’re not familiar with browned butter, here’s what it is: It’s butter cooked in a skillet until the milk solids begin to toast into a deep, nutty flavor. It’s the highlight of this recipe but if you don’t have time to brown your butter, no worries. This would be just as great with some flavored olive oil, some ghee or even some regular butter.
It’s is so simple to throw together, especially if you have your pasta already made or if you’re using a commercial pasta made with rice or wheat. Just cook it and have it ready to toss the ingredients together.
All you need cooked broccoli, cooked bacon, cooked pasta (whichever kind you’re using). Then throw it all together with the browned butter, some salt and pepper. Top it with some fresh grated Asiago cheese to serve.
It’s simple.
It’s delicious.
- sticks or ½ lb. butter
- Place butter in skillet over medium-high flame.
- Allow butter to melt without moving.
- When butter is melted, watch carefully and move the butter around every so often.
- Butter will eventually begin to darken and the solids will sink to the bottom, leaving more clear liquid on top.
- The color of the butter should be close to a caramel color and it should smell nutty. Remove from heat at that point.
- Reserve for serving.
- 1 recipe gluten-free pasta or 1 lb. of alternative pasta (wheat or rice)
- 2 cups broccoli, steamed
- 1 cup bacon pieces, cooked
- 1 recipe browned butter
- Asiago cheese to serve
- Combine pasta, broccoli and bacon in large bowl.
- Pour browned butter overtop and toss to combine.
- Serve with shredded Asiago cheese.
[WHEAT OPTION: Replace gluten-free pasta with your favorite wheat pasta. Egg noodles would be a wonderful choice.]
