I’m not sure this Roasted Butternut Squash really qualifies as a formal recipe but I’m going to share it with you anyway. My sister’s been making this dish for years. I was never a fan of butternut squash until I had it at her house. I can’t remember what she made it with but I’ve served it with both pork and chicken and it goes well with either. I mean … garlic, right?
So much garlic!

So delicious!
I’m sure you’ll love how simple and quick it is to make too. A little cutting, a little tossing and a little roasting. Done.
Garlic & Thyme Roasted Butternut Squash

Ingredients
- 2 medium butternut squash cleaned and cubed
- 2 Tbls. avocado oil or EVOO
- 1 medium red onion, cubed
- 1 Tbls. minced garlic
- ½ tsp. course salt
- fresh ground pepper
Instructions
- Heat oven to 425˚.
- Toss all together in a large mixing bowl.
- Heat a large baking pan in the oven for 10 minutes.
- Remove pan and pour squash mixture onto hot pan.
- Return to the oven for about 30 minutes or until squash is tender.
- Serves 4.
