I’m so excited to bring you this post! It’s my first giveaway for a while and it’s a product and company that I love, Wolf Gourmet. As a food stylist, I’ve been working with Wolf Gourmet since the launch of their products to market. Jobs over the last two years have had me using all of their products extensively for recipes and their official blog posts. I love working with them! I’m so honored to be a brand ambassador for Wolf Gourmet and this time around I get to offer you one of their four-slice toasters! (Winner has been chosen!) This toaster is amazing. Not only is it beautiful with those classic red knobs that all Wolf products are known for (#redknobsmakeeverythingtastebetter), it toasts evenly, accommodates wide breads such as bagels and it has a cancel button. Cancel. You read that right. No need to force the lever up if you need to stop the toasting. That alone is super cool! A while back I started some spelt sourdough. I’ve been struggling a bit but here’s one of the first very successful recipes I’ve come up with for it. Still playing with the breads … but the waffles? Mmmmm, delicious. This is a great way to use up extra starter because as anyone knows who “keeps” a starter, it grows pretty quickly so, it’s always good to have use options. Here are a few more if you’re interested. When we make waffles, the extras get stored in the freezer. We’re a family of three now that my daughter’s moved out so we can’t eat a whole batch all at once anymore. These waffles freeze well and the Wolf Gourmet toaster is great for crisping them up again, just like fresh! Actually, better, because I like really crispy waffles so I can dip them. There’s also a great recipe alternative to sugary syrup! Did you know there is an alternative to pancake syrup? Let me tell you, I’ve been searching for one for quite a while. I mean, I love maple but geesh, that’s a lot of carbs! I made this “syrup” up a few weeks ago and have made it many times since because it’s perfect. 😉 Fresh, light and just sweet enough. This “syrup” is just the right consistency for dipping buttery waffles and when they’re all gone, I drink the rest of it like a smoothie. So good.
- Waffles:
- 1 cup starter
- 2 eggs
- ¼ cup melted butter {or coconut oil for dairy-free}
- 1 ¼ cup whole milk {or alternative milk for dairy-free}
- 1 Tbls. honey
- 1 tsp. vanilla
- 1 cup spelt flour
- 1 ½ tsp. baking powder
- ½ tsp. baking soda
- ½ tsp. salt
- Creamy Strawberry, Poppy Seed “Syrup”
- 1 ½ cup Greek yogurt, plain
- 1 cup fresh strawberries
- 2 Tbls. honey (or sugar-free sweetener to taste)
- 1 tsp. poppy seeds
- 1 basil leaf, optional
- For the waffles:
- Combine all wet ingredients.
- Combine all dry ingredients.
- Mix wet and dry together.
- Waffle.
- For the "syrup":
- Blend all ingredients in a blender.
- If “syrup” is not thick like a rich smoothie, add ½ tsp. xanthan gum or glucomannan to thicken.
- Use as a dip or pour over waffles or pancakes with lots of butter.

Holy moly. How delicious those look! Totally drool worthy! I like different toppings depending on savory or sweet. 😉 Lately I have been loving a bananas fosters- ish type with cinnamon whipped cream on top! Still not as fancy as yours… lol

Your recipe looks delicious, but I’m afraid I’m not that fancy. Usually I just top with butter and maple syrup; sometimes I add strawberries and fresh whipped cream.

Thanks for sharing this recipe for the syrup… I am going to start my sourdough up again (hopefully it did not die😁) and start making waffles again… They were my second favorite after bread, to make, but way too much maple syrup!!!
