Who doesn’t love going to Ikea and getting their Swedish Meatballs and lingonberry sauce? Yeah, me too! And, it was well and good while I was eating the Standard American Diet and didn’t worry about ingredients, particularly gluten. But, sadly, the meatballs (and pretty much meatballs everywhere) have wheat in them.
It’s been years since I’ve had Ikea’s signature dish but that’s okay. I make it at home now. Like this …
Note: These meatballs make great leftovers. You’re welcome to cut the recipe in half (make just one pound of meat) for a smaller family meal but I like to make two pounds so we can eat them for lunch the next day. They go great with mashed potatoes and peas.
- For meatballs:
- 2 lbs. ground beef {I choose pastured}
- ½ tsp. real salt
- 1 tsp. dried parsley
- ½ tsp. onion powder
- ½ tsp. paprika
- 1 egg, large
- ½ cup gluten-free panko {I used Amelia’s}
- For gravy:
- 4 cups strong beef broth
- 3 Tbls. potato starch (OR 4 Tbls. corn starch {organic, of course})
- 4 Tbls. water
- 1 cup sour cream
- 2 tsp. Worchestershire sauce
- Mix all meatball ingredients together and form 35 – 40 meatballs about 1 ½ “ in diameter.
- Bake at 400˚ for about 20 minutes or until browned.
- While the meatballs are baking, make the gravy.
- In a saucepan, bring beef broth to a boil.
- Combine starch and water and mix well.
- As broth is boiling, add starch water and continue to stir until thickened. Cornstarch will need to boil for 1 minute, potato starch does not need to boil.
- (Note: Potato starch may produce a gummy gravy until you add the sour cream.)
- Turn off heat and add sour cream and Worchestershire sauce.
- Mix well.
- Place meatballs in a serving dish and pour gravy over top, coating the meatballs well.
- Serve with a side of a tart jam such as lingonberry or cranberry.
*Alternative recipe for my gluten-eating friends: If you don’t want to use gluten-free bread crumbs for this recipe, simply replace them with gluten-full bread crumbs and you’ll be golden. Unless you’re gluten-free, most people don’t have potato starch either so I gave a cornstarch alternative too in the recipe card. Enjoy!
