[#ad] By law I need to call this an ad because I have a professional relationship with the Fat & Happy brand, but, I would be posting this recipe even if I didn’t. It’s everything we want in low-carb eating. A nice, juicy protein with crunch to boot.
If you’re not familiar with Fat & Happy, let me tell you a little more about them. They’re a new, clean salad dressing brand made with ketone-producing MCT oil. You can read more about keto and MCT oil here.
Fat & Happy Foods makes three delicious varieties of dressings – balsamic, Italian and ranch. Over the next couple weeks I’ll be sharing recipes made with each of the dressings. If you follow them on Instagram, you can find more recipes in their stories! All of them are keto compliant (some with modifications) and all are low-carb!
Sometimes it’s difficult to get crunchy things on a keto diet because nothing crisps up like a good starch but the skin on these chicken pieces will not disappoint with the crisp factor!
This recipe is so simple you can easily prep it for a weeknight dinner in minutes. Just make sure to marinate the pieces for at least 2 hours (overnight works too) to get all the good flavor.
