I have a food styling client where the only requirement for the food is that it looks good. It’s really fun! As long as the foods look delicious, every one is happy. I get to play with high end meats, colorful vegetables and make pretty pies and tarts.
This Apple Maple Tart was one of my creations a few months ago. Gluten & grain-free! It also uses soaked & dried nuts, creamy ricotta (easy to make at home, wink, wink.) and local maple syrup.
Apple Maple Tart {grain-free}
Ingredients
- For the crust:
- 2 c. pecans (preferably soaked and dried)
- 1 T. tapioca flour
- ¼ c. brown sugar (I used organic)
- 6 T. butter, melted
- For the Filling:
- 2 c. ricotta
- 2 T. honey
- 1 egg
- ½ tsp. cinnamon
- ¼ tsp. ginger
- ¼ tsp. cloves
- For the Topping:
- 1 baking apple, peeled, cored and sliced thin
Instructions
- For the crust:
- Process pecans in food processor until partially chopped.
- Add tapioca, brown sugar and melted butter.
- Process until pecans are minced and mixture comes together.
- Press into tart pan, covering the bottom and up the sides.
- Bake at 350˚ for 10 minutes.
- While crust bakes, prepare filling.
- For the Filling:
- Stir all filling ingredients together until mixed well.
- Spread over crust.
- For the Topping:
- Arrange apples in the design of your choice.
- Bake for an additional 30 minutes.
- Remove from oven and cool.
- Drizzle with maple syrup just before serving.
