Perfect for a blustery fall day, this warm, comforting drink would be nice to hold while watching a good movie or fill a thermos with it for a day of hiking. You could even serve it at your get together.
I’ve never had the coffee shop version but I’ve read that it’s amazing. Personally, I’m sure it’s got wayyyy more ingredients than this version so I probably won’t be partaking anytime soon. I prefer to keep it simpler when it comes to weird ingredients and additives.
I picked up a gallon of raw apple cider at Wegman’s (We got a brand spankin’ new one in Lancaster!) a few weeks ago and got to work on this. Actually, it didn’t take much work at all – just a little experimenting and taste-testing. You would think the caramel might take this over the top in sweetness, but it doesn’t. The homemade whipped cream helps keep it in check because you can adjust the sugar.
I love this simple caramel recipe. It’s foolproof and pretty quick.
I make my own whipped cream most of the time but for these photos I did use a spray can kind. When I buy the canned kind, I look for a short ingredient list that has no gums of fillers. Good luck with that. We only have one brand available that even comes close.
If you’d like to make your own whipped cream, it’s SO easy. Here’s a quick recipe.
1 cup of heavy cream
Whip to soft peaks and add ½ tsp vanilla and 2 Tbls. 10x sugar.
Whip to stiff peaks.
That’s it! I put mine in a piping bag but you’re welcome to use a spoon to top the cider. It’s just not quite as pretty.
