Gluten-free Chocolate Pecan Bars

- 3 eggs
- 2 cups brown sugar
- 1 ½ cup gluten-free flour (I used King Aurthur cup for cup)
- 1 ½ cup pecans, finely chopped
- 1 ½ tsp. vanilla
- ½ cup mini chocolate chips
- Preheat oven to 300˚.
- Grease a 9”x 13” baking pan.
- In a mixer, cream eggs and brown sugar together.
- Add the rest of the ingredients except chocolate chips.
- Hand mix in chocolate chips.
- Lightly spray pan with non-stick spray. (Please choose organic spray)
- Make a sling of parchment to easily lift cookies out when cooled.
- Spread batter in baking pan evenly.
- Bake for 30 minutes or until toothpick comes out clean.
