Chocolate Chip Pie

- One gluten-free crust, unbaked
- 2 eggs
- ½ cup gluten-free flour (I use American's Test Kitchen mixture)
- ½ cup cane sugar
- ½ cup firmly packed brown sugar
- 1 cup butter, melted and cooled to room temperature
- 1 cup chocolate chips (I use Simply Enjoy brand)
- 1 cup walnuts (preferably soaked, dried and toasted)
- Preheat oven to 325˚
- In a large bowl, beat eggs until frothy.
- Add in flour, sugars and melted butter.
- Stir in chocolate chips and walnuts.
- Pour into pie shell and bake for 1 hour.
- Serve warm with real whipped cream or ice cream. It goes perfectly with coffee too!
