[#ad] Not every night is a full dinner night. Sometimes it involves layers of appetizers and this is one I would choose every time. I can’t get enough of these marinated veggies and the lemon dill dip.
I grew up with my mom making marinated veggies every time we had a family get together. I forgot how delicious they are and how much I miss them. Since I put this recipe together I’ve made them several times just to have in the refrigerator to eat with lunch. The flavor just keeps getting better the longer they marinate.

The creamy dip can be quickly thrown together with just a few ingredients that most people have on hand. It takes the veggies to another level of flavor.
All that great flavor comes from Fat & Happy Food’s Italian Dressing. It’s made with MCT oil instead of industrial seed oils and helps your body create ketones. It’s a great pre-made option for those on a low-carb or keto diet since it’s also sugar-free.
Choose your favorite veggies to marinate. You can switch this up easily with lots of color or keep it simple with just broccoli and cauliflower. Both are delicious options!

Notes:
• I blanch all the veggies so that they’re crisp/tender.
• When blanching, start with the lightest color to the darkest color. That way your cauliflower won’t end up green or orange tinted.
• Try to pour the dressing on when the veggies are still warm.
• Toss the veggies often for the first hour or two.
• Chill completely and serve cold with dip.
